  19. Prepare 2 batang daun bawang & seledri
  20. Get Bawang goreng
  21. Take Segenggam bawang merah
  22. Make ready 1 sdm tepung beras
  23. Make ready 1/2 sdt garam
  24. Take Bahan sambal
  25. Get Segenggam cabai rawit
  26. Get Secukupnya air
Steps to make Sop Ayam/Iga/Daging Rempah:
  1. Rebus daging sampai empuk bersama daun salam dan daun jeruk ditambah sedikit garam.
  2. Didihkan 1 lt air, bisa pakai air sisa rebus daging, tapi disaring dulu ya.
  3. Setelah air mendidih, masukkan bawang putih, jahe, pala, cengkih, kapulaga, kayu manis, pekak/bunga lawang. Biarkan sampai harum.
  4. Setelah air kaldu harum, masukkan daging, sayuran keras seperti kentang dan wortel, daun bawang, lada dan kaldu bubuk. Masak sampai sayuran empuk.
  5. Setelah sayuran empuk, masukkan kubis, tomat dan seledri, diamkan sesaat. Setelah dirasa cukup matang matikan kompor, beri garam. Tes rasa.
  6. Untuk bawang goreng, kupas bawang merah cuci di air mengalir. Iris tipis bawang merah kemudian taburi tepung beras dan garam, aduk rata. Goreng di minyak panas api sedang sambil sesekali diaduk sampai kuning kecoklatan. Angkat, tiriskan. Simpan di wadah kedap udara, bisa untuk stok bawang goreng.
  7. Untuk sambal, rebus cabai rawit ± 5 menit. Angkat, haluskan dengan ditambah air kuah sop/air biasa. Sambal siap digunakan.
  8. Note : jika ingin kuah bening, rebus daging dan sayuran terpisah dari kuah sop. Jangan pakai bumbu halus/bumbu kering, sebaiknya pakai bumbu segar dan pakai merica/lada putih.
  9. Sajikan dengan nasi putih dan air lemon hangat. Selamat memasak 👨‍🍳👨‍🍳
