Remove garlic, chilli and prawns from pan and set aside. Place pan back over medium-high heat and add tomatoes, stock and herbs. Season to taste with salt and pepper. Add prawns back to pan and toss well to coat.

- Wash, trim and peel the prawns. Snap the head off and devain the prawns.
- Add oil in to the Nonstick pan. Let the oil heat up and add butter. Once butter is melted, Sautés the prawns until they cooked. Add garlic and ginger. Cook until they light brown. Add herbs, salt and wine. Give it gentle stirr. Add some water. Let it simmer for few mins.
- For the sauce: put 3 tbsp of soy sauce in to little bowl and chopped chillies. Mix it together.
- Take the prawns off the heat. Serve them with boiled basmati rice and garnish with spring onions.
