  1. Bersihkan ayam, potong sesuai selera. Haluskan bawang merah, bawang putih, kemiri, (jika suka pedas bisa ditambahkan cabe sesuai selera), masukkan kunyit bubuk dan merica bubuk. Aduk rata. Tumis bumbu halus sampai harum, masukkan sereh dan daun jeruk purut, kemudian masukkan ayam, aduk rata. Setelah ayam terlihat menyusut/layu, masukkan air panas sekitar 1 liter, aduk-aduk sebentar saja, ungkep sampai air sedikit menyusut. Sekitar 30 menit dengan api sedang.
  2. Masukkan kaldu bubuk, aduk rata, cicipi rasanya. Masak kembali hingga airnya menyusut dengan api kecil, rajin di lihat agar tidak gosong.
  3. Setelah air menyusut, ayam siap untuk di angkat.
  4. Siapkan daun pisang, tata potongan sereh, daun seledri, daun kemangi, tomat dan cabai rawit, lalu ayam, tutup lagi dengan potongan sereh, daun seledri, daun kemangi, tomat dan cabai rawit. Bungkus ayamnya, ujungnya pakai tusuk gigi/lidi.
  5. Lakukan sampai ayam habis. Kukus ayam selama 40 menit dengan api sedang.
