  1. Cuci bersih bebek, buang bagian ekornya, tiriskan. Lumuri dengan air jeruk nipis diamkan selama 15 menit, lalu cuci beraih lagi, tiriskan.
  2. Tumis bumbu halus sampai wangi, masukkan daun jeruk dan serai, aduk sampai bumbu matang lalu masukkan bebek, aduk sampai berubah warna, beri garam gula dan air asam, tuang 2 gelas air, aduk rata, rebus dan sesekali diaduk kurleb 40-60 menit atau sampai daging bebek empuk, minyak keluar dan air rebusan menyusut lalu matikan kompor.
  3. Pisahkan bebek dr bumbunya, tiriskan, lalu daging bebek digoreng sampai kecoklatan
  4. Masak kembali sisa bumbu rebusan bebek, tambahkan 1-2 gelas air panas, masak sampai berminyak dan kecoklatan, bila masih kurang gelap warnanya bs ditambahkan air panas, masak terus sampai coklat kehitaman dan berminyak.
  5. Tata nasi dan bebek lalu disiram bumbu, bs disajikan dengan timun dan kol
