  1. Marinasi bebek dg air jeruk nipis dan garam, sisihkan.
  2. Siapkan semua bumbu. Potong2 kasar baput, bamer, bombay, cabe, jahe, kunyit, daun jeruk, dan kemiri. Blender semuanya hingga halus.
  3. Tumis sebentar bumbu halus, masukkan sereh dan laos yg telah digeprek, tunggu hingga bumbu agak kering dan harum
  4. Masukkan air asam jawa, garam, gulpas, dan gula jawa. Aduk sebentar, lalu tambahkan air.
  5. Tunggu hingga agak meletup, masukkan bebek yg telah dicuci dr air jeruk dan garam.
  6. Ungkep bebek dg api kecil selama ±45 menit hingga air menyusut.
  7. Angkat bebek, goreng dalam minyak panas hingga kecoklatan. Untuk bumbu hitam : aduk terus sisa bumbu ungkep tadi hingga mengeluarkan minyak dari bumbu dan warnanya menggelap. Aduk terus ± 30menit agar bumbu tidak gosong. Bebek siap disajikan dg bumbu sebagai sambal (krn sdh pedas) atau bisa membuat sambal sendiri.
