- Take 4 large courgettes

- Turn oven on to 180°c
- Slice courgettes in half length wise
- Place each half flat side down and cut into it from the top but not reaching the bottom. Chopsticks either side of the courgette will make this easy. Place a cut every 0.5 - 1cm
- Oil a baking tray, the carefully place the courgettes into the tray without breaking them. Drizzle oil on top, and place in oven for 40 minutes, basting with the juices half way
- Crumble the feta into a bowl and grate the lemon zest on top. Add pepper and tear up the basil. And parsley and mix.
- When cooked, put the courgettes on a serving plate. Juice the lemons onto the baking tray to de-glaze it, and pour that liquid on top of the cheese.
- Spoon the cheese mix on top of the courgettes and serve.
Add the courgettes and any juices from the baking tray, the drained bulgar and chickpeas, then toss everything together. To serve, place the roasted courgettes in the middle of a warm plate. Place the chicken breast on top and spoon the dressing around. Cooked courgettes can be mushy and disappointing, but using them raw and marinated like this turns them into something completely different. Courgette, feta and mint salad makes for a vibrant lunch recipe or a unique side dish.
